If you are not married then she is on her own visa wise. She does not qualify as a spouse, no matter how many children you have together. Get married, problem solved.

you are aware that after you set up any business you will need bt2million in registered capital, and hire and pay wages for 4 Thai employees for each work permit, meaning for two work permits you must have at least bt4million in registered capital, and hire 8 Thai employees. You also need licenses to import alcoholic beverages, and to sell them. What, if any, experience do you have in running your own business, not working for someone else? No one is going to partner with you unless you have money, and something worth while to offer. Dreams are one thing. Reality in Thailand is completely different. What research have you done other than asking on Facebook?

the biggest mistake you are making with your plan is getting the 30 day extension every time. That is not a pattern a real tourist uses. That is a pattern someone trying to stay long term in Thailand as a tourist used. Lots of actual tourists base out of Bangkok when they visit other countries in South East Asia. They do not get the 30 day extensions, and they do not always cross at the same location. After the first time you cross and come back, after having gotten the 30 day extension, you have a high probability of being stopped and questioned about what you are doing. After the second time entry can be refused until you get the proper long term visa. Buying a tourist visa does not guarantee being let into the country if they know you are trying to stay long term as a tourist. If you follow a pattern of an actual tourist you can stay here for years, but if you don't by getting the 30 day extension each time you can, you will be refused entry very fast, no matter how you cross and return.
