As a foreigner buying the traveling insurance required by the regulations, traveling with a marriage visa and indefinite timeline, do I need to buy insurance for 30/60/90 days? What if I buy 30 and I end up staying longer? Do I have to keep renewing?

you go some good and not so good info. IF you're comin' in on a 90 day non-O visa based on marriage to a thai you need a MINIMUM of 90 days of insurance. <- you need to be insured for the amount of time you're stamped in for and on a non-O visa you get 90 days
No, you need insurance for the duration of your trip. If you have a return flight showing you leaving the country within 30 days, you only need 30 days of coverage regardless of the visa.
You do not need b/s tickets. The Dutch consulate says you need insurance for the duration of your stay, what you prove with a ticket. Not the duration of your visa. And some airlines allow you to change the dates of your flight for free. You buy a ticket showing that you come for 1 month, and you can change the dates later. You can plan to do this, but you can also just change your mind.

I came on a touist visa with 60 days insurance and converted to Retirment Visa (15 months) and had no further insurance

There is no such thing as an "indefinite timeline/ indefinite visa" in Thailand. You will need insurance for the length of your Non-O visa/ or the remaining period of the one year extension of stay based on marriage.
I noticed you are female. Are you married to a Thai national? If you are, I highly recommend looking into getting PR as soon as possible. There is no income requirements for PR for being married to a Male Thai national.
Lol ok. I agree with Benjamin though. While marriage is never a pathway to citizenship for men, it's relatively easy for women married to Thai men to attain citizenship.
We do as well most of time. Just come in for a change and some craic with the girls. They like to here the daft things the crazy faring has done lately. They love a bit of gossip. 😇
I reckon she just interprets rules as she goes along. The multi entry B always baffled us. Why not issue it to those working in Singapore for working visits to Thailand. Said we had to get in home country which is not true. Just used Visa Exempt and technically broke the law multiple times a year for 10+ years.
Oh and that holiday next week we discussed. They just changed it to Friday right now as office aircon is off. The building now dictates our public hols 555

yes but she is back to normal, she was the one that wouldnt budge over requirement for insurance for one year, even though she knows i work in Singapore and i showed her the sandbox rules insurance has to cover length of my visa, which was 5 weeks
yep and I sent her flowers last year after she went all out to help me July 2020 get in. My wife phoned her i did tell her not to 5555, she just said thats not a nice lady
Been stories about her for years. Absolutely refused to give a very senior Pharma Exec a multi entry B visa for monthly visits to be absolutely legal. Said single only and apply each month.

I know you can buy extended Insurance even when you already in Thailand, I bought Insurance through the recommendation by Arawan Namak. I already asked her about this options before I buy. She will be able to help you with more information. She is very good.

I have dual passport Thai and Canadian. But my covid vaccine is under my husband last name. So, I have to travel back to Thailand under non 0 visa. That's how I can tell you from my experience. 🙂
