I just came here on a one way ticket on Cathay Pacific. They just asked me if I had enough funds to cover my stay. I said yes and that was it.

 I don’t think that’s correct. If you arrive on the 1st at 11pm then that would count as one night. If you arrived at 1am it wouldn’t as it’s just the start of the day before the first night.

You can stay without the need for a visa for 60 days. Note that it includes the day you arrive so it’s technically 59 nights.
