UK passport holders can enter Thailand with no visa for 30 days, not 60. If you were going to Vietnam you could do 30 days, in Thailand then go and you would get another 30 when you return.
as soon as you leave without a re-entry permit you visa expires. You can get a re-entry permit at the airport for 1000 baht if your visa is multiple entry.

100% you don’t need a re entry permit for a multiple entry visa. The only time this would be needed if you’re on the “second” year of an OA visa where the second year isn’t multiple entry.
