I will be in Phuket for a weekend to meet friends, go with them to Singapore, and then we end our trip in Bangkok. I don't want to start the 60 day tourist visa until I return to Bangkok. Will this be possible?

I'd say NO, if you have a 60 day tourist visa in your passport the immigration office is going to stamp you in on it when you arrive in thailand.
