Immigration has nothing to do with the embassy, It's under the Ministry of Foreign Affairs. You should have very carefully read the residency requirements if you are not a citizen and possibly even emailed beforehand. There's a reason you're seeing lots of approved applications at other embassies. It's because there are no problems there.

when departing by air on an overstay of less than 24 hrs you would receive a stamp saying overstay less than 24 hrs fine waived. So what exactly happened with you? How much was your fine 500 or 1000 baht

7 days left on your tourist visa? Did you buy a visa before you entered Thailand? Is it a multiple entry visa METV, or a single entry 60 day visa that you bought?

You can't interact with any Thai business or consumers in a remote work environment. You'd need a Thai registered company to do consulting here, but only in fields that aren't protected.
