I'm in Thailand on my second 60 day tourist visa and it's time for my first time ever doing an extension. I read the instructions sheet. I went to the website for immigration to make an appointment but can't. So .. I assume that for these 30.day extensions, you show up at IT laksi. ( Wherever that is but I can find out) with your preprinted passport copy, all the rest of the required paperwork and hang out until it's your turn?

You do not ๐ซ go to the IT Laksi Square Thai Immigration office...
You go to the Main Thai Immigration office in Bangkok.. the CW Chaengewattana Immigration Office to apply for the 30 days extension of your stay. It's ADDED to your current STAMPED ending date.
