go to a Thai Immigration Office and fill in a TM. 7 visa extension form, and pay the fee of 1900 Thai baht.
It also says it's at the discretion of the officer

TLDR : Answer Summary
Yes, it is possible to extend a 60-day tourist visa in Thailand for an additional 30 days. You need to go to a Thai Immigration Office and complete the TM.7 visa extension form, and pay a fee of 1,900 THB. The extension is typically granted at the discretion of the immigration officer. Some immigration offices may require additional documents such as the TM 30 address registration document, a passport photo, and copies of relevant visa pages and entry stamps.
Some places ask for a TM 30 address reg. document. Depends on the Imm office you use.

It's a very normal 30 day extension, you can get once when being on a tourist visa.
Just if you do not expire on Jan 25th do not go tomorrow since it will be very very busy at IO due to people trying to get a COVID extension (you not eligible for that yet )
