On my way to extend my visa exemption for 30 days, down in Krabi. I have read something about needing to provide the address and phone number of where I'm staying currently. We're house-sitting for a friend; should they have 'registered' us like in Vietnam? I don't want to get them in trouble - can I just give a hotel we stayed at when we first arrived, or just the hotel next door, maybe? Does anyone check?

Your first hotel should have done the reporting and if no one else did a TM30, youβre technically still registered to the hotel.

They should have registered you within 24 hours after arriving at the address. Hotels do this online, just random picking a hotel does not work if you are not registered by that hotel. I do not know if Krabi Immigration is asking for this address registration for the Extension of Stay on Visa Exemptions.
