For holiday. With the 60 days I can border hop one day from Nong Kai into Laos
Return to Thailand get another 60 day stamp then get 30 day extension making 150 days in total.

If you hold an australian passport, yes, just travel. The tourist visa (single entry) is actually obsolete now for people from one of the 93 countries on the 60-day-list.
Definitely recommend getting the extension on your first entry, unless you already have a trip planned to Laos for some other reason. That way if anything unexpected comes up, you still have that 30 day extra possible on your 2nd entry.
Yes... you can extend every entry once. So... 60+30, Border Bounce, 60+30 and so on... That works until the Immigration officer at the border will stop you... ๐
