My E-Visa was approved only a few days after I entered Thailand. So I am currently on the 30 days visa exemption.
If I do a Visa Run now, could I use the approved E-Visa? Or would I just get another 30 days?

You might as well stay the 30 days you're allowed on this free entry stamp. There's no down side to doing that
You need to print out the PDF file <- as that IS your visa from your email.
Go to the border, stamp out of thailand, stamp in & out of another country, present the eVisa PDF and your passport when you go to stamp back in and you will get stamped in on that visa no issue at all
