TLDR : Answer Summary
The possibility of converting an ED visa (student visa) to a Non-B visa (work visa) without leaving Thailand is complex. Generally, you cannot change the purpose of your current Non-Immigrant Visa. However, you may be able to cancel your current Extension of Stay based on education and simultaneously apply for a new Extension of Stay based on employment, provided your employer meets the requirements at the local Immigration Office. It's best to discuss the situation with your university and employer for assistance with the necessary documentation.
Do you have a sticker in your passport that is a VISA or a stamp for extension...?

the confusion is people say they have a Non-ED visa BUT in reality IF they looked in their passport they would see that the stamp says "extension of stay permitted until xxxx" with a date :O
That is NOT an ED visa, :(
AND
you can cancel an extension of stay for one reason and immediately apply for a new extension of stay for another reason, (Like education to working)
BUT
it takes coordination between your uni (to get the documents to cancel your extension) and the new employer (to get the documents to apply for the new extension) You do it at the same time. Cancel one extension, immediately apply for the new one

Hey, Iโm a student here too. Iโm fairly confident that we would need to leave and re-enter for a work visa

If you have an extension of stay based on being a student, talk to your local immigration office about converting it to an extension of stay based on employment.
You can not change the reason why you got an Non Immigrant Visa in your passport.
You might be able to cancel your current Extension of Stay based on education and directly apply for a new Extension of Stay based on employment. But for that your employer needs to meet the requirements at the local Immigration Office, Best is to talk with your employer.
